Ironically, all of my Googa Mooga foods are great suggestions to celebrate your Memorial Day weekend: corndogs, burgers, wings and fruit pops! Here is my approach to these favorites.
Corndogs: Hotdogs, Italian or Vienna sausages, seafood sausages, merguez or any tubular meat. Cut in half for better manageability and insert a skewer (or not). Coat in prepared box(es) of cornbread mix batter (like Jiffy), then immediately place into a pot of 350-degree vegetable oil (filled ONLY half way) and cook until golden. Drain on a paper bag or towel. Serve with dipping sauce.
Burgers: Get good meat (at least 20 percent fat), make generous, airy patties and bring to room temperature before putting on the grill. Liberally season with kosher salt and black pepper, cook to medium, flipping once (do not press on them), top with ridiculous cheese like Truffle Tremor, serve on a light buttery bun like a brioche. Toppings optional.
Wings: Brine wings in a liberal amount of salt and vinegar for at least one hour, rinse, pat dry. Evenly spread wings in one layer on a baking sheet, season with kosher salt and pepper, let sit for 15 minutes, then bake in a preheated 350-degree oven for 30 minutes, turning once half way through. In a large bowl, add your favorite sauce (I mix equal parts good BBQ sauce with apricot preserves) and the wings, toss to coat. Spread coated wings on the baking sheet and cook for another 15 minutes. Serve topped with thinly sliced scallion.
Fruit Pops: Skewers, mixed fruits, melted chocolate (prepare in a microwave safe bowl, on HIGH, 10 seconds at a time, mixing every time) and toppings–assemble and freeze!
